No, not fritters, but pancakes!
If you still have some zucchini in your garden, here’s another delicious recipe for you!
Zucchini Pancakes
- 2 small-medium zucchini
- 1/2 cup (60g) wholemeal flour
- 1 cup (250ml) basil leaves
- 2 cloves of garlic
- 2 eggs
- 1 1/2 cups (150g) grated cheese (parmesan/cheddar etc)
- salt and plenty of black pepper
Put everything in your food processor except the cheese, and whizz to a soft dough. Stir in the cheese. Heat a little oil in a pan and spoon dollops into the hot oil, then fry just like pancakes, turning when they start to bubble in the middle.
These taste great with a yoghurt, cucumber and dill sauce!

You know I love simple recipes, Robin! Well this is so quick and easy, and the herbs really add that extra “something”!
For some reason I can not get zucchini to grow in my garden. Others have a plethora of them and I am jealous of their ability to grow it.
That’s a shame. Maybe they’d grow in a large container, like mine do? Hope you have a good market nearby!

Planted some more and they are getting their leaves. With the heat I expect a good size plants and flowers before Sept so I might get some late summer zukes. My container plants wilted in the heat and did not produce much.
Mine didn’t do quite as well this year, either. I have never tried planting a second lot, but that’s not a bad idea… by the beginning of September the heat has gone and they would probably do well. Look forward to hearing how yours perform!

My zucchini is a real trooper this year. The worms keep chewing, but it still gives me one or two squash per week!
I’m sure you will all love these. My zucchini have gone over now, so time to tidy up a bit before sowing some spinach.

Great idea..I have many Zucchini bread many times and I know how good it is. Have you tried Chocolate Zucchini Cake? I lost the recipe but it was very flavorable when I made it years ago. I bet you don’t need recipes because you are such a great baker.
If I were you neighbor I would probably weigh a lot more….but I’d have a smile on my fat face.
I made a wonderful chocolate zucchini cake with walnuts last year… oh I DO need recipes! LOL! I must seek that one out…
PS If you were my neighbour I would probably bake much more often and we would both be enormous!
We love zucchini and this is something we’ve never tried. They look and sound delicious so I can’t wait to serve them for a weekend breakfast.
