It’s really really freezing outside (-12°C at the moment). And the forecast is for more of this Siberian weather!

The perfect opportunity to defrost my freezer and just put everything outside the back door for a couple of hours! I had an awful lot of old bread in there, and some of last summer’s blueberries…

A good excuse to do some baking 🙂

Bread and Butter Pudding

This is my Mum’s original recipe, adapted slightly. (We used to have sultanas in it instead of blueberries, and nutmeg instead of cardamom and vanilla). I love the warm, uplifting aroma of cardamom when baking, and it goes so well with blueberries.

Bread & Butter Pudding
4 slices of well-buttered bread, each cut into 4 triangles
1/2 cup blueberries
40g sugar + extra for sprinkling
600ml milk
2 eggs
1/2 tsp cardamom
1/2 tsp vanilla extract
Pre-heat the oven to 190°C. Arrange the bread triangles nicely in an oven-proof dish and sprinkle over the berries. (I also  added 2 slices of orange at this stage, but would not bother next time). Beat the eggs well in a large bowl with the sugar, cardamom and vanilla.  Boil the milk and pour it over the egg mixture, stirring all the time. Then pour over the dish of bread and butter.  Sprinkle the surface with sugar and bake in the oven for 50mins to 1 hour.

This warmed me up from the inside.

It also tastes good with apple and cinnamon!
