No, not fritters, but pancakes!
If you still have some zucchini in your garden, here’s another delicious recipe for you!
Zucchini Pancakes
- 2 small-medium zucchini
- 1/2 cup (60g) wholemeal flour
- 1 cup (250ml) basil leaves
- 2 cloves of garlic
- 2 eggs
- 1 1/2 cups (150g) grated cheese (parmesan/cheddar etc)
- salt and plenty of black pepper
Put everything in your food processor except the cheese, and whizz to a soft dough. Stir in the cheese. Heat a little oil in a pan and spoon dollops into the hot oil, then fry just like pancakes, turning when they start to bubble in the middle.
These taste great with a yoghurt, cucumber and dill sauce!
