Rhubarbanana Bread

Recently I was wondering if bananas would go with rhubarb… surely they would add sweetness and take away some of the sharp edge of the rhubarb? Well, only a day or so later Christina (from My Hesperides Garden ) commented on my post Dreaming of Crumble and suggested adding banana. Thanks Christina!

Well the crumble hasn’t evolved yet, but my banana bread has been adapted! Try this – it’s really tasty! 😉

Rhubarbanana Bread

  • 150g (1 cup) plain flour
  • 75g (¾ cup) ground almonds
  • 75g (1/3 cup) brown sugar
  • 75g (1/3 cup) white sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup roughly mashed ripe banana, (2 large or 3 small bananas)
  • 75g (1/3 cup) butter, room temperature (75g)
  • 2 tbsps milk
  • 2 eggs
  • 1 small banana cut into bite sized chunks
  • 2 sticks young rhubarb, sliced (about 100g-125g or 1 heaped cup)

Preheat oven to 190°C and grease and flour a loaf tin or similar baking tin (I used a 500g/1 lb tin and had enough for a few cupcakes too).

Sieve flour, salt, ground almonds, sugar, baking powder, and baking soda together. Mash bananas and butter together, and mix in milk and eggs.  Combine with the flour mixture.  Fold in the banana chunks and rhubarb slices and pour into cake tin.

Bake for 30-35 minutes, or until set.  Cool a little before removing from the tin.

And it stays nice and moist for a couple of days. (Probably longer, but we ate it too quickly! 😉 )

  1. That looks great! I just got rhubarb for the first time a couple weeks at a farmers market and made strawberry rhubarb pie – it was so good! I would not have known what else to do with rhubarb and our family loves banana bread so we will have to give this a try! Pinning to my Pinterest! Thanks for sharing

  4. Thanks for the link Cathy, I’m glad you liked the combination. I also add toasted hazelnuts to the crumble mix to top rhubarb and banana. I’ll give your loaf a try, it sounds and looks delicious. Christina

    • You’re welcome – thanks for the inspiration! That crumble topping sounds good too. I’ve used other nuts in crumbles, but not tried hazelnuts yet. 😀

  6. Sounds an interesting combo Cathy. Plenty of bananas in the house and off to the allotment in the morning where there may be some rhubarb to pick. Could well be a possibility 🙂

  9. My mother used to make a deep dish pie with Rhubarb/Strawberries and place a simple crust on the top. Your recipe sounds interesting and makes we think that perhaps a banana nut bread made by adding cranberries & nuts would be nice. Keep baking…

    • That sounds like a delicious combination too Mary. I have had walnuts in a banana bread before, and they went quite well. Strawberry season is around the corner too! 😀

      • Yes that is my favorite too I know around here they pair Strawberries and Rhubarb a lot now I would add Choc. to Banana 🙂 My Pear tree is loaded with blooms hope rain and colder temps don’t keep bees away 😦
