I am sharing another of our favourite vegan store cupboard recipes. This is great with a fresh salad, but failing that we have also eaten it with frozen peas or broccoli. As you may have noticed, we love garlic. And in times like these we do not have think about whether we can eat it without offending anyone the next day! π
Garlic spaghetti
It is so quick and simple to make.
For two people you will need:
- 300g spaghetti
- 1 onion, finely chopped
- 6+ cloves of garlic, depending on their size (or add an extra two or three!)
- 1 packet smoked tofu or vegan bacon, chopped into cubes (normal tofu is also good as long as you season it really well)
- approx 200ml good olive oil
- herbs, dried or fresh, for sprinkling
- vegan parmesan or nutritious yeast for sprinkling
- lots of salt and black pepper
While your spaghetti is cooking, sautΓ©e the onion in olive oil until soft, then add the garlic and switch off the heat. In a separate pan fry the tofu in a little olive oil, seasoning with salt and pepper.
Mix the onion, garlic and tofu together and serve over the spaghetti. Sprinkle with herbs etc.
Enjoy!

We had the same last night minus the Tofo π trying to get that by him I will never be successful at.
We love tofu, as long as it is seasoned well, or smoked…. you could sneak some smoked into a casserole perhaps! π

This looks delicious. Love the addition of the tofu with spaghetti. I never thought of that inclusion before. I do love lots of fresh herbs and garlic with pasta.

We eat a lot of tofu and I often just throw some into a dish for extra food value or – if it is smoked – for extra flavour. π
I would love to try this, forgot to buy garlic, ACK powdered would not do in this recipe.
Ooh, canβt imagine not having garlic in the house! Can you be addicted to it, like to coffee, or chocolate? π (I have garlic powder and dried sliced garlic in my cupboard too.)

Went to Aldi and they only sell Chinese garlic here and I won’t eat that.
That looks so good Cathy. I’ll have to try the only with real bacon. I forgot to buy more garlic, so I guess I’ll have to wait until next grocery trip. It’s so hard not to just stop in a store to pick up something you forgot, but I need to avoid unnecessary trips.
I know what you mean about the shopping Cindy. I have managed 9 days now without a shopping trip but need some fresh fruit and salad! For many years now I have made a plan of meals for the week ahead, so that helps me and saves waste. π

Cathy is a delicious recipe: I’m getting hungry and wanting to make it. But I don’t have tofu and getting it now is very difficult. We have extended the Alarm Status and home confinement until April 24. And I don’t have a mask to go outside. I’m going to sew one by hand with the fabrics I find: it doesn’t protect the same, but it does something. I just go down to the street to go to the pharmacy. The Covid-19 is very bad here in Madrid. And making the purchase through the Wahts App in a supermarket because the large stores do not serve for 15 days and ordering the fresh products from the market stalls by phone so they can bring it home and just go out to the street to the pharmacy to Because of the medicines, I can’t buy tofu in spite of myself. Oh, yum! Though I’m not sure how I feel about tofu with spaghetti … though I can always substitute bacon.
If you put lots of spices on the tofu and fry it till itβs crispy it is a good substitute for bacon! π
Mmmm – that looks good Cathy – we both like garlic and as you say we wont’t risk offending people the next day. A favourite and quick meal here is pasta mixed with a generous dollop of pesto and some petis pois. Most yummy.
That sounds delicious too, adding petit pois to pesto. π
