Spicy Rhubarb and Apple Muffins

I’ve become quite a fan of rhubarb this year, and keep looking for new ideas… This is the result of adapting three different muffin recipes, so I think I can call it my own! For a change, no vanilla today! Instead , some warm spices: cardamom, ginger, cinnamon and allspice.

Spicy Rhubarb and Apple Muffins

Preheat oven to 190°C. Prepare 12 muffin tins/cases.

Sift together:

  • 280g self-raising flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/4 tsp allspice
  • 1/4 tsp ginger
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 125g granulated sugar

In a separate bowl mix together:

  • 1 egg
  • 150ml milk
  • 3 tbsps sour cream
  • 75ml vegetable oil

Pour wet ingredients into dry and stir in:

  • 100g rhubarb, chopped into 1cm pieces
  • 70g finely chopped apple

Fill 12 muffin cases, and sprinkle with:

  • a little brown sugar

Bake for 20-25 minutes.
